12 Days of Treats – Seven Layer Bars

It’s Day 7 of the 12 Days of Treats and we’re raising the bar.  (womp womp!)

These Seven Layer Bars were something I avoided like the plague as a kid because…coconut.  But as an adult, you need to keep them at arms length because holy moly are they rich, decadent bars of goodness!

Browning the butter to add to the crumbs definitely elevates it if you have a few extra minutes!  These are definitely one of my new favorites of an old recipe for me!

Seven Layer Bars

Ingredients
  • 1 1/2 cups graham cracker crumbs (9 sheets of graham crackers broken down)
  • 1/2 cup (114g) melted or brown butter
  • 1 (14 oz.(535g)) can Sweetened Condensed Milk
  • 6 oz (240g) Butterscotch chips
  • 6 oz (240g) Semi-sweet chocolate chips
  • 1 cup (85g) Flaked Coconut
  • 1 cup (144g) chopped peanuts
  • Cooking spray
Instructions
  1. Preheat oven to 350 degrees.
  2. Put aluminum foil in 13 x 9 inch pan so the foil comes up over the sides of the pan.
  3. In a saucepan, brown the butter then add to the graham cracker crumbs. Pat the crumb mixture down into the pan so all of the foil on the bottom is covered evenly. Spray the sides of the pan with some cooking spray to help things not stick as it bakes.
  4. Layer chocolate chips, butterscotch chips, and nuts over crumbs.
  5. Pour condensed milk over nuts. Sprinkle coconut over condensed milk.
  6. Bake until edges are golden brown, about 25-30 minutes. Let cool completely then lift out foil and cut into 24 pieces.
