Sometimes we crave sweet potato casserole but the thought of chucking one of those things together makes you want to forget about it. In this video, I’m going to show you how to make a single to double serving sweet potato that tastes just like that holiday favorite without the leftovers or work.  It takes 10 minutes from cutting board to tater hole and you get to choose your own toppings so you can decide if you want to go healthy or a little more devilish.  Perfect for those who may be away from family but still want to get a taste of the holidays!

  1. I do love sweet potatoes, but I’m not sure I’ve ever had a fig, or fig butter. Will definitely have to look into this!

    1. If you’ve ever had a Fig Newton, the fig butter is the same consistency. Trader Joe’s and World Market both carry it if you’re ever interested in trying it!
