Fig Sweet Potatoes

Sometimes we crave sweet potato casserole but the thought of chucking one of those things together makes you want to forget about it. In this video, I’m going to show you how to make a single to double serving sweet potato that tastes just like that holiday favorite without the leftovers or work.ย  It takes 10 minutes from cutting board to tater hole and you get to choose your own toppings so you can decide if you want to go healthy or a little more devilish.ย  Perfect for those who may be away from family but still want to get a taste of the holidays!

Ingredients
  • 1 large sweet potato
  • 2 tbsp fig butter
  • Mini Marshmallows
  • Pecans
Instructions
  1. Poke the sweet potato with a corn cob holder for steam holes.
  2. Microwave for 6 minutes while you turn on the broiler.
  3. Cut the sweet potato in half and allow to cool for a minute or two.
  4. Gently score 1/4" around the edges of the sweet potato and scoop the flesh into a bowl.
  5. Add the 2 tbsp of fig butter and stir until thoroughly incorporated.
  6. Scoop back into the potato shell and top with marshmallows and/or pecans.
  7. Place under the broiler until the marshmallows are toasted to your liking.

  1. I do love sweet potatoes, but I’m not sure I’ve ever had a fig, or fig butter. Will definitely have to look into this!

    1. If you’ve ever had a Fig Newton, the fig butter is the same consistency. Trader Joe’s and World Market both carry it if you’re ever interested in trying it!
