It’s important to…

Your root vegetables that is.  Wait!  Where are you going?!  I promise you’ll love this!

While turnips and carrots are available year round, parsnips (the white carrot for the uninitiated) aren’t in season in the summer.  Something about roasting this combo in the Fall is so delicious and the perfect side dish to allow people to try something new to them.   When I was trying to expand my culinary horizons, I made myself get two new to us foods every grocery trip and turnips and parsnips were one of them.  This was the dish I made and it’s one we love to throw in there for variety.  Roasting brings out a deliciously sweet side that would be the perfect accompaniment to a holiday dinner.  Let’s help others get back to their roots too!
