Tuna Zucchini Rounds

It’s coming toward the end of January and some people might need to shake things up a little to keep interest in their healthy eating goals.  These Tuna Zucchini Rounds are one of my favorite ways to keep tuna fish from getting boring.

A simple mix of ingredients you probably already have on hand along with the fresh crunch of zucchini slices to keep things low carb if that’s your thing.  You can save some calories without sacrificing flavor.  The best thing is you can double or triple the recipe if you’re having a gathering so that those still trying to stay on track have an option.  You’ll get points for not trying to derail people’s health goals.

      On the email subscription, I just had 2 other people check and they were able to subscribe so just as a troubleshooting measure, make sure you enter the email address where it says “subscribe to blog via email.” (End of the page on mobile or on the right upper sidebar on desktop site.) Once you enter the email, it will send you one that you need to click the link in the email to confirm your subscription. Also, if you’re using Edge or IE for the browser, try using Chrome or Firefox. (If you have a YouTube account, you can subscribe to the YT channel and it will notify you as well) I hope this helped and would love to have you along for the ride!

  2. Umm… can anyone say HEAVEN SENT?!
    I have been so struggling with this whole new year’s resolution thing. There are only so many ways you can eat tuna – I thought! Then, this little gem falls into my lap.
    The cucumber gives you the crunch of a cracker, while still being moist enough to give the tuna some flavor if you’ve gotta skimp on the mayo. You have saved my meal prep for next week – thanks for sharing!

  3. What a healthy and quick snack! I actually enjoy eating both tuna and zucchini but I have never thought of pairing them together. This just may become my new quick go-to snack on those busy days with the kids. Nice linking up with you this Friday!

  4. This is lovely, as I just made a pact with myself to eat a salad a day, I think this work just fine, isn’t it? I love all ingredients, however, I have never tried raw zucchini (I always steam them).

    1. This will help keep that resolution…totally a salad! Honestly raw zucchini just tastes like crunchy nothing! LOL

    1. I’m not a cuke fan so zucchini has always been my go to for that kind of stuff. I think you’re gonna love ’em. Gives a nice crunch but let’s the tuna be the star. 😉

  6. I have been looking for snacks to make, I have just become diabetic and need to lose some weight as well. I can handle the meals but the snacks are difficult. This is a good idea and would work with cucumber too. Thanks for the idea.
