There is nothing I love more than an easy but elegant side dish.  For me, tri-color carrots always make me feel like a fancy pants and then you add some high falootin’ honey to the mix and you’ve got my heart.  Roasted veggies are my thing.  I love the beautiful caramelization and sweetness it lends to whatever you end up roasting from asparagus to potatoes to these babies.

I mean, could ya just dive in head first?  I know I could!  These can be made easily while you’re making the rest of dinner and your family or date will think you are the shiznit!  (Or whatever the kids say these days.)    Let’s jump right in.    The video shows you how to bring it all together and what the recipe should look like in different stages.

    1. Chipotle honey is so good! If you can’t find it, add 1/4 tsp of chipotle powder to 2 tbsp of honey and you can get the same effect!
