Who loves side dishes that can be made for dinner and any leftovers easily translate to breakfast?

*waves hand wildly*

These Pesto Asiago Smashed Potatoes do just that!  Easy to prepare and they look like you spent a lot of time making a fancy side.   Potatoes are a great vehicle for wonderful flavors and this has it in spades.  I went from serving it with kicked up chicken one evening and the next morning I put two basted eggs over the top of two of them and had an amazing breakfast.  Score!

  1. This looks so good I made something very similar for dinner tonight. We basically had the same ingredients except changed potatoes to squash. I bet yours would be really delicious.
