I remember one Christmas, a friend of my cousin brought chocolate covered potato chips to a holiday gathering.  We all gave it a sideways glance but because there was chocolate, how bad could it be?  One bite transformed us all.  That was it.  It was likely we were going to be body slamming each other for the last one and that’s when I remembered a friend made these in cookie form but I’d passed on them because I hadn’t expanded my horizons yet.  Consider that wrong officially righted.

Come to mama!

Inside these delicious shortbread like cookies are crushed potato chips and when you combine that salty crunch with the luscious dark chocolate, your mind will be blown.  These satisfy that snacking itch we all have and who says you have to settle for salty OR sweet.  It’s the holiday season, you put on your eatin’ pants and go for broke!  I usually top half with some salt flakes to accentuate that chocolate goodness and then the other half I’ll do seasonal sprinkles.

  2. I love quirky cookies: I hope that doesn’t offend the cookies! Shh, we won’t tell them.
    My grandma used to make mashed potato cookies. Not sure if there were mashed potatoes in them or they just looked like them. As you can tell, I paid attention to the details when I was a child.

    One more cookie to add to the menu……thanks a lot. 🙂

    1. The cookies say they prefer quirky so you’re good. I remember potato candy or something like that and I refused to eat it as a kid because I was picky like that but now, anything is obviously fair game!
