Pumpkin Gingerbread Loaf

As we dive further into Autumn, the call of holiday baking gets strong.  Sweet spices like cinnamon, ginger and the potent kick of molasses bring a comforting smell that makes you cozy from the inside out.  When you mix that with pumpkin, you are in for a treat that you’ll want to enjoy as breakfast, a snack or gift to others to spread the love.  This amazing Pumpkin Gingerbread Loaf is definitely one of my Fall favorites and is as moist as it gets.  No butter or spread needed…but always welcomed if that’s your jam!

Pumpkin Gingerbread Loaf
Pumpkin Gingerbread Loaf

Ingredients
  • 1 1/2 cups (200 g) all purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup (240 ml) pumpkin puree
  • 1/2 cup (112 g) butter, melted
  • 1/2 cup dark brown sugar
  • 1/2 cup (120 ml) molasses
  • 2 eggs, beaten
  • 3 Tbsp water
Instructions
  1. Preheat oven to 350.
  2. In a bowl, combine flour, salt, baking soda, ginger, cinnamon and nutmeg.
  3. In a seperate bowl, mix pumpkin puree, melted butter, sugar, molasses, eggs and water
  4. Combine dry and wet ingredients.
  5. Spray loaf pan generously with cooking spray or butter pan. (I used the Nordic Ware Pumpkin Loaf Pan in the video)
  6. Bake for 50-60 minutes or until toothpick clean in the middle. Allow to cool for at least 10 minutes before loosening the sides and flipping onto a wire rack to cool completely.
