One of our favorite flavors, especially this time of year, is peppermint. I know, that makes us rebels, doesn’t it? More specifically white peppermint bark. Give me one of those Lindt white peppermint truffles and well, you shouldn’t just give me one because that’s not possible to stop at one. I love peppermint kisses too and when I was looking for a way to use the ones I had left, I ran across this recipe, I knew I had to put my own spin on it.
Don’t the swirls of the kisses look like they’re trying to hypnotize you into eating them or is that just me? These are slice and bakes which means you can make and freeze the dough ahead of time and when Aunt Jane says she’s stopping by in 30 minutes, you can have fresh baked cookies to impress her. I love the crunch of the crushed peppermint in the dough with the slight goosh (totally a word) of the kiss when it’s still melty. Not that it’s worse when it’s hardened back up but I will quote my husband when I asked if he wanted one.

Peppermint Kringles
Notes
Use a mix of chocolate and peppermint kisses if you like.
If you want more of a peppermint kick in the peppermint candy side, add 1/2 tsp of peppermint extract to that side of the dough.

Ingredients
- 36 candy cane kisses, unwrapped
- 1/2 cup butter, softened
- 1/3 cup sugar
- 1/4 teaspoon salt
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 8 drops red no taste food gel
- 1/4 cup crush peppermint candy
Instructions
- Freeze 24-36 kisses for 1 hour.
- Add salt to flour and stir to combine and set aside.
- In a large bowl, cream butter and sugar until light and fluffy, about 3 minutes.
- Beat in egg yolk and vanilla extract.
- Gradually add flour into wet mixture.
- Divide the dough in half and remove one portion. Add 1/4 crush peppermint candy to dough and mix until thoroughly combined then remove it from the bowl.
- Add the other plain dough back to the bowl and add 8 drops of no taste red gel and beat until combined and solid red.
- Divide each half into 2-4 four portions and shape into 9-12 in. long rolls.
- Place one red log next to one white log; and press together gently to create one roll. Gently roll until it becomes one solid log. Repeat with the remaining dough or cut the one long roll in half.
- Wrap logs in wax paper and refrigerate 1 hour or until firm. (This is the point you would wrap in a goodly amount of plastic wrap and place in a freezer bag if you're making the dough ahead)
- When ready to bake, preheat oven to 350°.
- Unwrap the dough and cut into slices of your desired thickness. The cookies don't spread much so shape according to your preference.
- Place 2" apart on ungreased baking sheets.
- Bake 10-12 minutes or until the edges are set.
- Press a frozen kiss into center of each cookie as soon as they come out of the oven.
- Remove from pans to wire racks to cool completely.

I actually don’t like white chocolate but I do love those Lindt’s you mentioned.
I believe Ghiradelli has a peppermint white chocolate too? That is yummy too.
Maybe if I have peppermint with it, I am more attracted to it? Who knows.

Honestly, you can add any other kind of chip to it but I don’t know about peppermint. That one’s on you! LOL I just did the white so it had red, white and green but not one person could taste the white chips. Godiva has some chocolate chips I just tried and we really liked them!
