Sweet Potato Toast

I don’t know if you’re like me but I get in a breakfast rut.  I often find myself being lazy and making what’s easy over what I might be craving or a healthier choice.   Sweet potato toast has been all over Instagram the past few years and is a tasty way to swap out bread if you’re following a specific diet (paleo, Whole 30, etc) or if you just want to switch it up on occasion.  This method is best if you’re a meal prepper.  It allows you to batch roast sweet potato slices that are toaster ready when you are.

I know most people do the whole pop it in the toaster for a few rounds thing but that would mean I need the energy to want to cut it up and go a few rounds with a toaster.  (Which, by the way, I don’t own anymore.  We gave it up several years ago after my two-butt kitchen coveted counter and/or cupboard space over a 4 slice toaster.  Broiler, it is.)  This make ahead method allows me to batch cook these babies and have them available when I want them.

I just pop ’em under the broiler for a minute or two (keeping a close eye on it and flipping halfway through) or more often, I put them in a skillet to crisp them slightly while I’m grabbing my toppings.

If you’re new to the tuber toast game and wondering how to top it,  your options are not just limited to sweet.  Savory toppings are just as delicious on these little slices of heaven!  Below are some ideas for both so that you can enjoy a new flavor on the daily.

Peanut butter and banana (add bacon if that’s how you roll)
Real fruit jam
Fig butter
Nutella and strawberries
Cream cheese and cinnamon
Pumpkin or Apple butter
Almond butter with chopped dates
Better N’ Peanut Butter with pepitas
Mascarpone with cinnamon honey
Greek yogurt and dried fruit and nuts
Nutella, coconut flakes and sliced almonds

 

Ricotta with sundried tomatoes
Tomato sauce and mozzarella
Avocado slices (or guac)
Poached eggs
Pesto Scrambled Eggs
Hummus and cheese (or sliced veggies of your choice)
Scrambled eggs, black beans, salsa, pepper jack cheese
Chicken Salad
Smoked Salmon and cream cheese with chives

    1. It’s a great way to have it toaster ready for one round with most of the work taken out of it. I hope you love it if you try it!

    1. I’ve frozen roasted sweet potato chunks which is the same thing just cut differently and it was fine. I’d say wrap each slice individually, like take a long piece of plastic wrap then roll one, stack another on top and flip it and repeat until you have a stack of about 4-6. Then wrap over the stack with another piece just to secure the sides then store in a freezer bag so you can pop them out overnight to thaw as needed before toasting up in the morning. I hope that made sense! 😀

  1. What a great idea! I grew up with a toaster oven, so when I started faulting a traditional toaster became part of my kitchen space as well. We use both, but the toaster oven is so versatile it gets more use- thank you for the blog hop share!
